Healthy Recipe: Colourful Chaos

While I might be trying to bring more simplicity to my wardrobe, cluttering my galley kitchen with pots and pans every time I make dinner is a habit I just can't seem to break.

I do intend to bring less chaos to the kitchen in future, but sometimes a throw-it-all-together attitude can create something beautiful and, more importantly, delicious.

Also, I have no idea about macro and micro nutrients but I'm pretty sure this is healthier than a kebab...

Ingredients (feeds two with leftovers for a packed lunch):

Listed in alphabetical order to bring some order to proceedings
  • Balsamic vinegar/ glaze (for the dressing)
  • Broccoli (a whole one)
  • Bulgar wheat (about a cup)
  • Chilli flakes (unless you can't handle it)
  • Feta cheese (unless you're vegan)
  • Flaked almonds (for sprinkling)
  • Olive oil (for baking and dressing with)
  • Red pepper (for the side salad)
  • Salad leaves (rocket is best but spinach will do)
  • Sweet potato (two, three or four, depending how much you like them)
Optional: These teal plates add yet more colour


Method

Step 1: Boil the kettle and pop the bulgar wheat into a bowl. Pour the water over until just covered. Cover with a plate and set aside.

Step 2: Preheat the oven to 180 and chop the sweet potatoes into smallish chunks. Pop them in a large bowl and lightly coat in olive oil. Add whatever seasoning you fancy (I do salt, chilli flakes and a few herbs). Transfer to a foil-lined baking tray and bake for around 15 mins or until the edges start to burn caramelise. 


Step 3: Chop the broccoli into bite-size chunks before transferring to a pan or wok with a little olive oil. Add seasoning (I usually use chilli flakes, but soy sauce is great too) and fry on medium heat until  the colour deepens. Drop a few splashes of water in to help them along. 


Step 4: Prep the side salad by tossing salad leaves and chopped peppers together with olive oil and balsamic vinegar. Transfer this to one half of the dish you'll be serving it on and crumble feta over the top.


Step 5: Take the sweet potatoes out of the oven and the broccoli off the heat. Add these to your dish. Fluff up the bulgar wheat with a fork and add this too. 



Step 6: Sprinkle over with flaked almonds, sit down and enjoy! 

...then tidy up.
